Roasted Garlic Parmesan Carrots
Made of three vata balancing foods with a little cheese thrown in for comfort, it is sure to warm your belly and soothe your nerves on a cold winter night.
Carrots, as many as you want (for reference, I personally eat about 1.5 carrots when we have this)
Extra virgin olive oil
Garlic Salt OR Powdered Garlic, depending on preference
Fresh grated parmesan cheese
Slice your carrots any way you like. Sometimes we do french fry like sticks, other times we make coins of them. Try to keep your slices uniform in depth so they cook evenly.
Pour about a teaspoon of the EVOO in your hands and toss the carrots to spread the oil over all surfaces.
Sprinkle with your garlic salt or powdered garlic.
Sprinkle with parmensan.
Bake at 400 for 20-30 minutes until the cheese is melted and looking toasted.
You can also add thyme or basil to these to add in an extra dose of vata balancing and flavor.
